There are new discoveries going around regarding probiotics (healthy bacteria living in your stomach) being linked to health of your brain. Garlic, Leeks, Onions are great ways to help promote these bacteria. As part of our meals, we need protein, healthy fats, and carbs as well. Below is a meal I use twice a week to help me stay fit, healthy, and happy. The hummus takes about 10-15 minutes to prepare. Keep it in the fridge for up to 3-4 weeks and the wraps are easy to assemble for lunches.
Hummus:
2 Cans Garbanzo Beans
1/4 cup tahini or raw sesame seeds (tahini makes it taste better)
1 Tbsp Olive Oil
1/3 cup Lemon Juice
4 cloves of garlic, freshly minced
1 tsp. Cumin
1/2 - 1 tsp sea salt
1/8 - 1/4 cup water
- Drain and rinse garbanzo beans
- Place all ingredients in a blender or food processor and combine. Add more water/oil to desired consistency.
Wrap (Hummus, Kale, Tomato, Cucumber, Avacado, Shredded Carrot, Red Onion):
1-2 stalks of Kale, shredded
Cucumber, 4-5 slices
Tomato, 3 slices
Red Onion, sliced
1/2 Avacado, sliced
1-2 Carrots, shredded
- Place a brown rice tortilla, or a Josephs flax/wheat wrap on plate.
- Shred up some Kale and place on the wrap.
- Add hummus next, then slice up tomato, cucumber, avacado, onion, and shred carrots.
